A Culinary Journey Through Cho Lon at Oryz
This visit marked my third time at Oryz, and I was particularly captivated by their Saturday set menu, "Cho Lon."
Reimagining Street Food Classics
The menu artfully and meticulously recreates the traditional street food of the Chinese community in Cho Lon. Familiar flavors of childhood favorites like pha lau, duck noodle soup, wonton, sui cao, hu tieu ho, and century egg congee are easily recognized. While retaining their iconic names, each dish undergoes a clever transformation with novel ingredients, resulting in an explosion of taste and a delightful experience.
Fermentation Innovation
Oryz's dedication to using house-made fermented ingredients is both a strength and a topic of discussion. They have a dedicated laboratory upstairs where they ferment everything from the simplest to the most elaborate ingredients. Describing all the delicious dishes would take too long, so I will highlight my three personal favorites: Oryz's Pho Bo, Trieu Chau Pha Lau, and Hainanese Chicken Rice.
A Consistently Delicious Experience
Unlike other fine dining experiences where some dishes shine and others fall short, Oryz provides a uniformly delectable experience. Beyond the detailed presentations of each dish, the attentive and meticulous service throughout the meal makes every penny spent worthwhile.
